Rice Pasta with Beef and Vegetables

1 package rice or quinoa pasta, boiled until soft

2 Tbs olive oil

1 medium onion, chopped

1 lb grass fed ground beef

2 – 3 cups vegetables of choice, chopped (peppers, zucchini, greens, green beans, mushrooms…)

Salt to taste

Sherry or red wine vinegar to taste

 

In a heavy skillet, sauté onion and beef until cooked through.  Add vegetables of choice and sauté until soft.  Add salt and vinegar to taste.  Serve over cooked pasta.
