Mixed Greens and Onions

Ingredients

  • 2 large onions, chopped into inch-sized squares
  • 1/4 cup olive oil
  • 4-10 cloves of garlic, chopped
  • 1 large colander full of kale, swiss chard, beet greens or a mix of baby braising greens (available at some health food stores) rinsed and sliced into fine or coarse strips (depending on preference).

On medium or medium low heat, cook onions in olive oil until semi-soft and translucent. Add greens and garlic and cook just until greens are wilted. To preserve nutritional and medicinal value, try not to overcook.
