French Lentil Soup with Sausage

2 Tbs olive oil

1 medium onion, chopped

1 – 2 large carrots, chopped

2 ribs celery, chopped

2 – 3 large gluten free turkey sausages (check label for ingredients – Sheltons or Whole Foods brands are ok)

1 cup French lentils

4 cups chicken broth (add extra water if needed)

3 cups kale, remove ribs and chop coarsly

Salt to taste

Sherry vinegar to taste

 

In a large stockpan, sauté onions until soft.  Add carrots, celery and sausage.  Sauté until sausage is nearly cooked.  Add lentils and chicken stock (liquid should cover all ingredients by 1 – 2 inches).  Add water to make sure liquid is the correct depth.  Boil for 30 – 40 minutes or until lentils are soft.  Add kale 3 minutes to the end of cooking. Add salt and sherry vinegar to taste.
