Cuban Salad

Ingredients

  • 4 cups fresh mango and/or papaya 
  • 2 cans organic hearts of palm
  • 1 small red onion (finely chopped)
  • 1 cup celery (finely or coarsely chopped)
  • 2 cups cilantro leaves chopped
  • 2/3 cup lime juice
  • 1/2 cup olive oil
  • 4 ripe but firm avocados

Marinate finely chopped red onion in lime juice until juice is pink. Cut mango and hearts of palm in one inch cubes/segments. Combine fruit, heart of palm, chopped celery and onions in lime juice. Add cilantro and olive oil. Toss and allow to marinate, refrigerated, for an hour or more. Stir gently a few times while marinating. Just before serving add cubed or sliced avocado to the top of the salad.
